Krystaly v n\u00ed b\u011bhem procesu vytvo\u0159\u00ed pevnou strukturu, co\u017e zaji\u0161\u0165uje, \u017ee \u010dokol\u00e1da bude m\u00edt spr\u00e1vnou konzistenci.<\/li>\n\n\n\n<li><strong>Lesk<\/strong> \u2013 Temperov\u00e1n\u00ed dod\u00e1 \u010dokol\u00e1d\u011b leskl\u00fd vzhled. Sugar bloom, zb\u011bl\u00e1n\u00ed kv\u016fli cukru, nast\u00e1v\u00e1 p\u0159i vy\u0161\u0161\u00ed vlhkosti (75\u201380 %). Cukr se rozpust\u00ed, stoupne na povrch \u010dokol\u00e1dy a zkrystalizuje p\u0159i vypa\u0159ov\u00e1n\u00ed.
