<strong>Ta\u017een\u00fd \u0161tr\u00fadl se k n\u00e1m sice dostal z V\u00eddn\u011b, ale jeho ko\u0159eny sahaj\u00ed k tureck\u00e9mu obl\u00e9h\u00e1n\u00ed Ma\u010farska. Ma\u010fa\u0159i se tehdy nau\u010dili p\u0159ipravovat toto t\u00e9m\u011b\u0159 pr\u016fhledn\u00e9 t\u011bsto, bohat\u00e9 na lepek a sm\u00edchan\u00e9 s teplou vodou, kter\u00e9 se d\u00e1 snadno tvarovat a plnit<\/strong>.<\/p>\n\n\n\n<p>Zat\u00edmco k\u0159i\u017e\u00e1ci bojovali s Turky, Ma\u010fa\u0159i se nau\u010dili p\u0159ipravovat tenk\u00e9, t\u00e9m\u011b\u0159 pr\u016fhledn\u00e9 t\u011bsto, kter\u00e9 lze snadno plnit a p\u00e9ct na sladko i na slano. Z\u00e1kladem byla v\u017edy kvalitn\u00ed mouka s vysok\u00fdm obsahem lepku, kter\u00e1 sm\u00edch\u00e1n\u00edm s teplou vodou nabobtn\u00e1 a potom, co ho nech\u00e1te odpo\u010dinout, tak se d\u00e1 snadno vyv\u00e1let a vytahat do tenou\u010dk\u00e9 placky. <\/p>\n\n\n\n<p>Prvn\u00ed recept byl zaznamen\u00e1n v roce 1696 a je zn\u00e1mo, \u017ee v 18. stolet\u00ed ho pod\u00e1vala Marie Terezie jako dezert sv\u00fdm host\u016fm. U\u017e jsme zm\u00ednili, \u017ee je st\u011b\u017eejn\u00ed pou\u017e\u00edvat kvalitn\u00ed mouku s vysok\u00fdm obsahem lepku, vhodn\u00e1 je tedy hladk\u00e1 p\u0161eni\u010dn\u00e1 mouka, kter\u00e1 tvo\u0159\u00ed z\u00e1klad pro ta\u017een\u00e9 t\u011bsto. <\/p>\n\n\n\n<p>Pro dosa\u017een\u00ed optim\u00e1ln\u00ed konzistence <strong>t\u011bsta na jable\u010dn\u00fd \u0161tr\u00fadl <\/strong>se k mouce p\u0159id\u00e1v\u00e1 voda, mno\u017estv\u00ed se upravuje podle pot\u0159eby. Je d\u016fle\u017eit\u00e9 s ingrediencemi pracovat dle pot\u0159eby t\u011bsta a nikoliv slep\u011b n\u00e1sledovat recept. Ka\u017ed\u00e1 mouka toti\u017e saje tro\u0161ku jinak. <\/p>\n\n\n\n<p>Do t\u011bsta se p\u0159id\u00e1v\u00e1 i olej, rozpu\u0161t\u011bn\u00e9 m\u00e1slo a citronov\u00e1 \u0161\u0165\u00e1va, d\u00edky tomu budete m\u00edt t\u011bsto pru\u017en\u00e9 a sv\u011b\u017e\u00ed. Jako pojivo se pou\u017e\u00edv\u00e1 vejce, d\u00edky tomu v\u00e1m bude t\u011bsto dr\u017eet.
